Bihari cuisine is one of the hidden gems in terms of Indian regional cuisine. Rich in both flavour and technique. Our gravies are prepared with Panchforan - a mix of fennel, fenugreek, nigela, mustard and cuman seeds. The predominant element of our food which is used as our base for cooking is mustard oil. Slow cooking is the technique used to prepare all our delicacies.

The use of whole spices or Khada Masala for the non-veg preparation is also a unique element, which gives it complexity and depth. The diversity in the cuisine is a noticeable factor, for every dish is distinct from one another. Litti Chokha, being our trademark dish are roasted whole wheat balls stuffed with Spiced sattu (roasted gram flour). It is usually served with eggplant chokha and for non-vegetarians, it is paired with authentic Khada masala mutton. Traditionally, Littis are roasted on cow dung cakes which gives it a smoky flavour. It is nutritious and wholesome.

For preparing our breads we use rice flour and millet flours making our cuisine highly gluten free option.
